Coq au Vin

  • Chicken pieces enough for 4
  • 1 cup white wine
  • 1 scant teaspoon sage
  • 2 strips of bacon
  • Salt and pepper
  • 3 tablespoons olive oil

Brown chicken pieces in oil after seasoning them with salt and pepper. After chicken is browned, drain off grease and pour wine into skillet; sprinkle sage over the chicken, arrange bacon on top, cover, and cook over low flame until chicken is done (about 20- 25 minutes).
